for meatballs: 15g fresh wholegrain breadcrumbs, 60ml milk, 250g sausage meat, 350g minced meat (pork and beef), 1 egg, 125g ricotta cheese, 75g freshly grated Parmesan cheese, ½ finely chopped red onion, a pinch of nutmeg, a pinch of cloves, fresh parsley leaves, 1 crushed garlic clove.
for tomato sauce: 3tbsp olive oil, ½ red onion (cut into cubes), 2 garlic cloves (finely sliced) 120ml vegetable stock, 300g (about 4) fresh tomatoes, 380g canned diced tomatoes, salt and pepper to taste.
Server with: freshly chopped parsley and grated parmesan
