100g softened butter, 50g coconut oil, 80g brown sugar and 40g granulated sugar, 2tsp vanilla extract, 1 egg.
225g flour, ½ tsp bicarbonate of soda, ¼ tsp salt, 135g dark chocolate chunks.
Method:
Preheat the oven to 170°C fan and line with parchment paper two baking sheets.
Put 100g softened butter, 50g coconut oil, 80g brown sugar and 40g granulated sugar into a bowl and beat until creamy.
Beat in 2tsp vanilla extract and 1 egg.
Sift 225g flour, ½ tsp bicarbonate of soda and ¼ tsp salt into the bowl and mix it in with a wooden spoon. Add 135g dark chocolate chunks and stir them in.
Use a teaspoon to make rounded shapes onto the prepared baking sheet.
Bake for 8 minutes until they are light brown on the edges and still slightly soft in the centre.
Remove from the oven, slip the parchment paper with cookies onto the kitchen counter and let cool.
